Low GI Chocolate Mousse (could be vegan)

Ingredients

600g silken tofu

110mls amber agave

1/2 cup cacao powder

2 eggs (or egg substitute)

40mls thickened cream (or coconut cream)

3tbs arrowroot powder

 

Stupidly Easy Instructions

Combine all ingredients in a bowl and mix until smooth. You can do it by hand or use an electric beater. Place in a suitably sized baking dish and bake on a low temperature.

Allow to cool, then chill and serve with mint leaves and whipped cream. Enjoy!
